Basil Grilled Vegetable Sandwich with Goat Cheese

I came up with my own version of this sandwich to impress a certain someone. Let me just say, it’s so delicious that he instantly fell in love. The flavors of this veggie sandwich are so rich that you’ll forget that it’s meatless.


Ciabatta Bread, enough for 2-3 people

1/2 Large Eggplant, sliced 1/4 inch thick

1 Red Bell Pepper, sliced into long chunks

2 Zucchinis, sliced 1/4 inch thick

3 oz Goat Cheese

2 Handfuls of Fresh Basil

1/2 cup Olive Oil

2 Cloves Garlic, minced

1 tsp Dried Parsley

1 tsp Salt


In a blender or food processor, combine basil, oil, garlic, parsley and salt. Slice the veggies as uniform as possible and brush them with the basil oil.  Grill them on both sides until they are soft and tender but make sure not to burn them!

Once the vegetables are done, remove them from the grill.

Cut your bread length wise and brush it with the remaining basil oil.  Put the bread on the grill until it gets slightly crispy and has grill marks.

You can ignore the zucchini rounds…those were a snack for the chef.  Once the bread is toasted, remove it from the grill and smother both sides in goat cheese.  Assemble the vegetables neatly, starting with the eggplant.  Cut the sandwich into pieces and eat.  There won’t be much table talk…only grunts and hmmmmms. If you are a vegan, feel free to leave out the goat cheese and replace it with avocado or avocado pesto.
