Since we have a costco sized bag of walnuts, I figured I would try to make raw granola. I looked up a bunch of recipes online and many of them say to put the mixture in the dehydrator. The flavor and texture of the non-dried granola is perfect so I didn’t even bother drying it.
1/2 cup raw walnuts, soaked overnight
1/2 cup raw cashews, soaked overnight
1/8 cup pumpkin seeds
12 dates, soaked in warm water
1 Tbsp honey
coconut flakes (optional)
Soak the walnuts and cashews overnight in a glass jar. Pour off the water and place the soaked nuts in the food processor. Add the honey. Pulse until coarsely chopped. Put the nuts in a bowl. Soak the dates for 10 minutes in warm water to soften them. Place the in the food processor and pulse until it forms a paste. Add the nuts back in and pulse so that the nuts combine with the paste. Remove the mixture from the processor and place in a bowl. Add the coconut flakes if you so desire. I suggest eating this like cereal; with milk and fruit on top. The milk cuts through the sweetness of the dates and makes for a hearty breakfast.
