Basil Lemonade

Oh summer!!! I love it. The fresh fruit. The sun tans. The warm nights. But it does get unbearably hot during the day.  I found a great recipe for a refreshing drink in my Vita-mix cookbook.  I tweaked it a bit by adding less basil.  It has a nice bite to it and reminds me of a mojito.


2 lemons

3 cups water

5 fresh basil leaves

1/4 + cup sugar/splenda/sweetener of choice

ice (optional)


Peel 1 lemon and throw it into your blender.  Cut the other lemon in half and squeeze the juice into the blender.  Add the rest of the ingredients and blend until smooth. You can add ice while blending to achieve a slushy consistency.  I prefer to put ice in my glass and pour the lemonade over it.  Garnish with lemon and a sprig of basil.
